Power your workout with this protein packed, antioxidant rich pre-workout meal. Actually, this meal is excellent post-workout as well!
Ingredients:
1 TBSP Ghee
12 Large Organic Eggs Beaten
1 C Diced, Sautéed Organic Broccoli
1 C Diced, Sautéed Organic Spinach (or 1 small box frozen organic Green Giant Spinach, thawed)
1 C Diced, Sautéed Organic Onion
1 C Diced, Cooked, Organic, Nitrate Free Turkey Bacon
1 TBSP Nutritional Yeast
Optional: 1 C Organic Shredded Cheese of Choice
Directions:
1. Preheat oven to 350 degrees
2. Dice and sauté all veggies, cook and dice turkey bacon
3. Combine all ingredients in a medium bowl with eggs, season with salt and pepper
4. Pour into prepared muffin cups (either rub with EVOO or line with foil cups)
5. Bake 15-20 minutes or until toothpick inserted comes out clean
