Grilled Herbed Chicken & Potato Foil Packets

Prep Time: 10 minutes

Cook Time: 20 minutes


Ingredients:


4 boneless, skinless chicken breasts

2 cups sweet potato slices

1 cup sliced mushrooms

1 tsp. garlic powder

1/2 tsp. dried oregano

1/2 tsp. dried basil

1 tbsp. olive oil

salt and pepper to taste


Instructions:


  1. Stir seasonings together and set aside. Add oil to a bowl along with chicken, potato slices and mushrooms and toss.

  2. Lay out 4, 12X12 sheets of foil. Divide potatoes and mushrooms between each sheet. Place 1 chicken breast on top and season with salt and pepper to taste. Fold foil over and pinch sides to close each packet.

  3. Place foil packets on a cooking sheet and bake for 10-15 minutes then flip and cook another 5-7 minutes.

  4. Open carefully.
